Everyone has their own opinion whats best and some make money on selling certain brands..
I use Redline in the rear and tranny... I bought it from Jegs. 75w90 in the diff.. already has the friction modifiers.. Use ATF D4 in the tranny. Has to be ATF and dexron III compatible if you want to use whats recommended by the manuafacturer.
I have been using redline oil for many years and find it to be excellent, I'm sure the other premium brands also work well..

Synthetics are better at lubricating and keeping things clean.. they can also can handle more heat which is important in the C5 as the main components don't get much airflow..

Tranny fluid (meets Dexron III standards):
AMSOIL ATF (Product code is ATF)
Takes just under four quarts
Diff fluid (meets GM standards and comes with friction modifier in it)
AMSOIL Severe Gear Extreme Pressure 75w90 (Product code is SVG)
Takes just under two quarts
FYI, I use both these in my Z06 which sees exclusive track use. You can order via the link posted above (thanks Brian), or the info in my signature.
