Purpose of coolant catch can
I thought the function of the design was to allow air to pass out of the system and pull fluid back in on the cooling cycle. Ergo, a few cycles of heating and cooling and trapped air should all be expelled. Do I have my head where the sun doesn't shine?

Yes, that is part of it. It also allows the system when under pressure to expel some liquid so that things don't explode and suck it back in when things cool down and the pressure drops.
