exhaust-to-header flange stud/screws
Are stripped. Do I have any options or am I going to need new headers? I can't lift the engine, so if there are any ways to swap them without doing so, I'd love to hear it.

On mine, those are removable bolts with nuts. If they won't come apart, an exhaust shop can cut them off, then install new ones.
If they're fixed, you'd have the same option.
If you can't even GET to a top-side bolt, you might have to dismount the header from the head.

If so, my first guess is they are splined like a wheel stud. They can probably be driven upward to remove/replace them.
I'd verify that from another member though....

Nice, are the new studs available online anywhere or would I have to go salvage hunting?

And yes most all part stores carry them (check the "HELP" parts line). IIRC I think they are metric, but ended up replacing mine with standard which is slightly larger. A tap (standard) cleaned up the threaded holes in the manifold for the new studs. A couple of nuts tightened together on the old stud will allow you to back them out. Remember, penetrant is your friend.

I twisted off one my studs because the nut was frozen on the stud. They are relatively easy to burn out with a torch. Drill a hole through the center and use a cutting torch. If you don't chicken out and stay on the oxygen the stud will burn out without hurting the manifold.

Well I dare not take the nut off just yet because despite being stripped, it's holding. I'll get to it when I get new heads and straight pipes, but that's for another thread.

My studs are the same way and when I reassembled the exhaust after the head job I thought I would take another nut and run on the stud if the regular one didnt hold. The threads everywhere else looked fine but where it counts were pretty worn out. You may try that if the nuts come loose.
