Default Cooling Sender

I did a carb conversion on my 84 and I also installed a new fan switch which turns the fan on at 174 and off at 160. The fan switch is screwed into the drivers side head and the temp sender is on the intake manifold. The fan appears to be working properly, however the temp read out is always very low(120 - 150), with an occasional run very high (above 200). Oddly enough the readout will show 140 but the fan will be on. Do temps vary that much or do I have a bad sender?
