Sorry for the hijack!
Ceramics- are the best. Very little dust that doesn't cake up like the metallics. Also the ceramics dissapate heat much better, and can grip the best. The downside is the cost.
Organics- work better then metallics, but make more dust and don't last as long.
Metallics- last a long time but can do a number on the rotors and have the lowest performance of the three. Hope that helps ya!

I don't know if JeffVette is on here anymore but at this point, I would opt for Caddy or Camaro brembos over the pucked (you can change that p with a another letter if you'd like...) z06 system. Tons of applications, tons of pad types and 6 piston brembos...

There are plenty of sources for single-piece pads now for the C6Z06 front calipers...most of the regular racers are using them over the stockers now.

That is good, when I first looked into this years ago Carbotech was working on them but they hadn't hit market yet. It still looked like they were pretty thin and expensive considering the alternatives but I can hope I'm wrong.

To make the system REALLY work, aftermarket hats/rotors or at least rotors with the cooling vanes the correct direction on both sides is a must. GM ONLY made 1 side...and used them for both so the stock rotors don't cool like they should (one side does...the other does not).
Then the cost of brackets, lines, pads, etc. when you factor that in, are you better off getting a Wilwood setup?
I've heard it from the Z06 crowd a lot that the stock calipers spread too much for hard HPDE events, so you need to factor that into the equation as well.
Myself, I'm going to go this route so I can rest easy. It will cost more up front, but the massive choice of pads available and the size of the rotors (a standard size) means that in the long run it'll end up saving me more.
I think the stock Z06 brakes are good for moderate track duty, autocrosses and street driving, but if you get into extended track duty they will (eventually) fail on you. Most Z06 owners report fade after 5-10 minutes of lapping sessions when driven hard, along with frequent caliper bleeding at the track when used hard.
So, the choice is directly related to how hard you intend to use the brakes. I tend to drive fast, brake VERY hard (and late) and then maintain momentum through the turns. Others I've ridden with brake early to set up their corner speed, so they don't get them quite so hot. Your driving style will dictate what caliper is right for you.
In any case, good luck with your choice and let the rest of us know how it goes.
