Default 1968 427 - What else should I address while the engine is out?

I have the engine trans out of my 68 for the winter...
installed a Tremec 5-speed last year and could not get the clutch fork / bearing setup right (Lars white paper...)
So I pulled the assembly today and will get it perfect.
While Out I am adding a Borgeson steering, cutting the springs a bit (or replace) and will go through the steering and suspension
I have already completely rebuilt the rear suspension
Is there anything else I should address while the engine is out?

The carb is a crap reman.... thinking about a Holley Sniper setup

My goal is as close to a summer daily driver as you can get with a 68 convertible is the northeast....

Inspect and replace any vacuum lines and repair any brittle/cut wires in the harnesses.

When I had mine out I replaced the heater core
, rebuilt the suspension, replaced the brake lines, repainted the visible frame, repainted the engine compartment, repainted the wheel wells, went through the brake calipers, went through the entire steering system, cleaned all the wires and hoses then reattached them to the firewall . Basically everything I could see got touched, rebuilt, replaced or cleaned and painted.

Winters are long here, the garage is heated and I really like working on my car. I wish I had more money because I want to do allot this winter. I am just regulated to what I need to do this winter which is a shorter list

A little insight, I pulled my engine the last 2 winters and it’s coming out again looking for an oil and tranny leak. It’s really easy

I did the same thing in 2015 for the most part....but anything that could be considered an ancillary component was powder coated satin black......and Stainless ARP bolt were used everywhere......

Yup! I'm in the north east.... lots of time.
Heater core.... good call there, didn't think of that...
It's funny, in the summer I would never think of pulling an engine but in the winter....
much easier to pull than fight in tight spaces....

Started with "just overhaul the engine" and ended up with full body off restore. When you are still doing, you can just as well do this....and then it rolls on

How many miles are on the engine? Those old BB's were notorious for cracked piston skirts and broken valve springs. Also take a close look at cam wear. If it were me I'd do a refresh on engine while it's out.
