Default Temperature gauge issue

Hi my 72 vette temperature gauge has a mind of its own ?? I changed the stock radiator with a aluminum radiator and the hoses .My issue is that the temperature gauge goes hot to 230-240 degrees for 15-20mn and than drops back to 200 degrees ? Is that normal or is there something wrong ??

what temperature thermostat are you using? Are you sure you dont have air in the cooling system?

Hi I'm still using the stock thermostat a little rusted "should i change it ?" and how can I check if there is air in the cooling system ??
