Can anyone tell me the difference between the 7 pin and 8 pin switch (other than the obvious)? Will a 7 pin switch work in place of an 8 pin and are there any wiring modifications that need to be made? Car is a '71

Why are you asking? Can you not find the correct switch?

Actually this is a non-issue. I just checked out the wiring harness and there is no wire in the connector for the missing pin.

All of the stores I checked out around here sell the switch, but none have the vacuum actuator attached, so I went with an online order for the 68-72. That switch came in as a 7 pin.
