I dislike the seats but would dislike them less if they were solid black.
Not my seats nor my wife. However, I do like my girlfriend's seat but don't expect pictures.

The seat design is OK; the colors and design match with the rest of the car. Tell your wife that you "always appreciate her opinions" and thank her for the input.
Now, if she just wants the red portion recolored to black, that is a fairly simple task. You just need to remove them from the car, clean the areas to be painted REALLY WELL, mask off the other portions of the seat, and shoot a couple of coats of black SEM Colorcoat vinyl dye over the red areas. If you buy rattle can SEM, spray a test patch on something before you remove the seats and compare the color and sheen to the black areas on the seats. If they are much different, you don't want to go that way. (I much prefer SEM liquid Colorcoat...mixed at the auto body paint supply store...and sprayed on.)
If she wants red/black, but in a different design, that would be costly and troublesome. Not worth the effort, IMO.
P.S. With that red/black 'striped' design to flow well with the rest of the interior, those inset panels on the upper portion of the door panels should have been painted red, also.
P.P.S. More Important Advice: In the future, avoid AT ALL COSTS any concept of "right or wrong" on differing opinions between you and the spouse. There is NO right or wrong with regard to OPINIONS....BOTH ARE VALID. The sooner you accept that notion, the better off the [long term] marriage will be.

Listen to her opinion. Then show her how much it would cost to replace the covers, explain how you would have to find a shop willing to do the work (even if you could do it yourself) and how they might not be as comfortable as the ones now. Also show her different types of seats that could be used as replacements as you might want to keep the seats that are in the car for resale. Show all this to her then: change the seats sleep on the couch or in the car. I changed the seats.

They look good and so does the car. I think you're good to go.
I feel a little guilty about all the resto-mod things on my 68; I try to keep the external appearance stock (exception 69 side exhausts), and interior appearance is very stock..exception..Al Knoch's leather seat covers which were not a 68 option. I do have seat head rests and shoulder belts in the 68 which are a rare option (Al Knoch and Snake Oyl are your friends). The factory duplicate 68 shoulder and seat belts were about $900, they repro duplicate head rests with original factory tooling were about $400. Only 35 68 Verts had shoulder belts.
