I am looking at a Hardtop for my C2 convertible but the hardtop interior is black and my C2 is Saddle.

What items would need to be replaced to make the interior of the hardtop Saddle? Are kits available to make the switch?

Headliner and strip and paint trim pieces. Pretty simple fix.

Easy to disassemble and paint all the trim pieces. I don't think headliners come in saddle. You might have to paint or dye the liner or perhaps glue some color match material to the headliner.
