I'd return it to its original White color in order to maximize the value should you ever decide to sell it.............
Then I'd kick it up a notch.

Daytona Blue with Red Interior!!!!!

I came home from the hospital, just days-old, in a black/red 63 coupe.
Even still, I'd recommend silver/red as the most striking combination for my tastes.

My favorite '63-'64 color by far is the rare Saddle Tan (kind of a golden brown sugar metallic). But personally, I doubt if I'd pair it with a red interior.
Sebring Silver and Ermine White are nice, but if summertime interior temp is not a problem, I'd vote for TUXEDO BLACK.
And would I recommend original one-piece aluminum American Racing Equipment Torq Thrusts, the most accepted, admired and expensive custom street wheels of the early '60s. If you want to run wider tires with stock fenders, try the look of the disc brake model, not as deep-dished but 7" wide rims will fit where regular drum brake TTs are tight with 6" and all that positive offset.

By the way, mine is silver and black - a combination I looked for for years before I bought mine.

Since it's a father and son project, you pick your favorite color and you dad pick his. Then mix them both and see what color you get.
Black would be my favorite.

If I could have ordered a Corvette coupe in 1963, I would have specified Sebring Silver with a Red interior. And then two years later I would have added OEM side exhaust. ..... Okay, I'm sorry but I think that a '63 coupe w/added '65-'67 side exhaust (and knock-offs) makes for a gorgeous car !
