If I have 2 speakers at 8ohms that are rated at 75w power handing, when I hook them up in parallel to create a 4 ohm load does that mean the power handing capacity doubles to 150w then or is it increased to 300w for the pair? Thanks for any help with this.

Each speaker can handle 75watts regardless of how they are wired. So if you had two wired to the same "outlet" on the amp, you'd supply 150watts to the pair.
the impedence has to do more with how your amplifier is going to react..

Speaker power handling does not change under any wiring scheme. What changes is the output of the amplifier that is connected. Typically, less impedance will increase power output but be careful because some amplifiers will not be very stable at a reduced impedance.
