How hard does the JL sub hit? ... I am planning on ordering the 10W3v2(2002 model) ... and run it with the 500/5's sub channel (250WRMS) ...

Pretty damn hard...But keep in mind that if you're going for a bumper, it won't do it...It's an excellent sub for an SQ setup, but if you're looking SPL, look elsewhere.
I generally play rock, metal and techno and the single 12 is sufficient for all of it. It'll especially kick once I replace the PG amps with the JLs.
One thing to mention...we put a ton of Dynamat in the car...In the doors and all around the sub enclosure. It helped alot and I'd recommend doing it. If you do, be warned that it will change how your car sounds when you're driving it. It cut out so much road noise from the rear and basically changed the way the car sounded, that at first I thought it wasn't running right. I've also got the gain all the way down on my sub amp. It can easily be turned up to the point where the 12 drowns out everything else.
I'd seriously consider the 12w3. I looked at the 10s (my old car had a pair of 10w4s), but didn't feel that a single 10 would be enough to match the DynAudios in the front. The JL stealthbox only takes the 10w3, but any compentant shop will be able to make an enclosure for the 12. We did mine out of fiberglass to get as much volume as possible.
Another bit of opinion...the rear is absolutely not necessary. I've just got the front Dyns and noone believes me when I tell them there are no rears. You will not be able to tell a difference.
As for the plate...I'm not sure who the manufacturer was. I know the first one the shop tried looked like crap so the switched to this one. I can find out if you want.
