Can someone who has an '08 with Nav confirm that there is no factory iPod/mp3 jack and this is only a dealer-installed option?

Consider it confirmed and it will be a dealer installed option. The last WAG i heard on this subject is availablitiy of this ipod interface won't be until September at the earliest; now given GM's history of availability in the past I can't tell you what year. Ciao amigo

i'm looking in the documentation and it clearly states that MP3 come U3U audio system w/nav

It is especially upsetting because there are other upscale GM vehicle that DO incorporate the Nav and iPod capability.
